Chocolate fudge bars layer deliciously with cookie crumbles and chocolate chips in this beautiful ice cream cake that's perfect to serve a crowd. You can customize your own cake with your favorite snack size ice cream bars. Feel free to swap in different cookies and toppings to best suit your and your guests' tastes. Graham crackers and mini marshmallows would be great, or give vanilla wafers and peanut butter chips a shot. Also if you have an offset spatula handy, you'll definitely want to use it to make this recipe.

Mini chocolate chips

1½ Tbsp, roughly chopped

Instructions

  1. Line a standard-size loaf pan with enough plastic wrap to hang over pan edges.
  2. Arrange 4 ice cream bars to cover bottom of pan (remove sticks from bars as you work).
  3. Smooth ice cream together with a spatula to form an even layer; sprinkle with half of crushed cookies.
  4. Repeat with another layer of 3 bars and remaining crushed cookies; finish with a layer of 3 bars.
  5. Freeze for several hours or overnight. Carefully unmold cake onto a platter; sprinkle with chips. Slice into 12 pieces; serve immediately.
  6. Serving size: 1 slice
