Ingredients

Beef fillet steak, lean, raw

600 g

Green or Brown Lentils, cooked

250 g

Fennel

1 individual

Dill, Fresh

1 tablespoon(s)

Grapefruit Juice

30 ml

Dijon Mustard

1 tablespoon(s), level

Vinegar, All Types

1 tablespoon(s), apple cider vinegar

Grapefruit

1 medium

Instructions

  1. Make the dressing. Whisk all the ingredients together in a small bowl and season well. Cover with cling film and chill in the fridge.
  2. Heat a large, nonstick frying pan over a high heat. Season the steaks then sear for 1-2 minutes each side for rare, 2-3 minutes each side for medium and 4-5 minutes each side for well-done. Remove from the pan and let rest for 5 minutes. Cut into thick strips.
  3. Toss together the grapefruit, lentils, fennel, half the dill and the dressing. Divide between plates, top with the steak and serve garnished with the remaining dill.
