This low-carb, grain-free bread alternative is becoming very popular.

Ingredients

Egg, whole, raw

3 medium, raw

Low Fat Soft Cheese

60 g

Cream of Tartar

¼ teaspoon(s)

Calorie controlled cooking spray

4 spray(s)

Wafer thin ham

4 slice(s)

Light Mozzarella

100 g

Tomato

4 large

Basil, fresh

Instructions

  1. Preheat the oven to 150°C, fan 130°C, gas mark 2.
  2. Separate the eggs and put the yolks and whites in separate bowls. Mix the low-fat cream cheese into the yolks, season and set aside.
  3. Add the cream of tartar to the egg whites and whisk to stiff peaks.
  4. Carefully fold the egg whites into the egg yolk mixture to combine, and drop 8 equal dollops onto a baking tray misted with calorie controlled cooking spray.
  5. Bake for 15-20 minutes.
  6. To serve, sandwich 2 cloud breads with 1 slice lean ham, 25g low-fat mozzarella, tomato slices and some fresh basil leaves, and seasoning.
