Chicken Caesar salad
1 individual, Romaine
Low Fat Soft Cheese
Low Fat Natural Yogurt
Anchovies in oil, drained
Chicken breast, skinless, grilled
4 teaspoons, grated, Black pepper to serve
- Break the lettuce into separate leaves and tear these into pieces. Wash well in the colander; drain and share between 2 plates or bowls.
- Cut the garlic clove in half, then rub the cut surfaces around the inside of a mixing bowl - you only want a hint of garlic. Add the soft cheese and beat it until smooth; then add the yogurt and anchovy paste, mixing until combined. Tear in the chicken and toss to coat it in the dressing.
- Arrange the dressed chicken over the lettuce leaves. Halve the tomatoes and add them to the salad. Scatter an equal amount of croutons over each portion and sprinkle 2 teaspoons of Parmesan cheese over each serving. Season with a little black pepper and serve.
