Cook bacon medallions in calorie-controlled cooking spray until browned. Set aside. Mist the pan with the cooking spray again and add finely chopped onion. Cook until softened, adding a splash of water if necessary. Add a small chopped garlic clove and cook for a further 2 minutes. Add chopped red peppers and diced courgette; cook for 10 minutes until lightly coloured. Add tinned butter beans (drained) and sweetcorn kernels and cook for 5 minutes. Season well, remove from the heat and stir in cherry tomatoes (quartered), chopped fresh chives, fresh parsley, baby spinach and lemon juice. Snip the bacon medallions and scatter over the bean mixture to serve.
