Hi everyone, I'm Jude (@vegetarian.jude on Instagram) and I joined WW mid-January 2016 following a breast cancer scare.
Thankfully all was fine, but it was a huge wake-up call, and the lightbulb moment for me to lose weight and start living a healthier lifestyle - not just for my sake, but for my family’s too.
I set myself small, achievable goals, and slowly but surely those lovely little half pounds and pounds added up to a total of 84lbs (that’s 6st) by April 2017!
My weight loss journey changed my outlook on life. I feel so much younger and healthier too. It’s also reignited my love of cooking fresh seasonal foods, including fresh fruit which I’ve topped my pancakes with in the vlog below.
Because nothing’s off the menu on the WW programme, my love of pancakes can be thoroughly indulged on Shrove Tuesday, along with the rest of the family.
For me, flavour is what good food is all about, so I serve my pancakes with a variety of tasty toppings including: figs, cherries, flaked almonds, honey, caramelised banana and jammy blueberries. Sometimes even just a little lemon and sugar does the trick!
