Pork sliders with Asian slaw

These tasty little pork sliders are great for entertaining a crowd. The delicious fresh red slaw is what really brings the flavour alive.


Ingredients
Red onion
3 small
Lean pork mince
1000 g, (1kg)
Garlic
2 clove(s), crushed
Fresh lemongrass
2 piece(s), finely chopped
Lime rind
2 tsp
Fresh coriander
⅓ cup(s), chopped
Fish sauce
2 tbs
Lime juice
100 ml
Caster sugar
1 tbs
Fresh red chilli
2 whole, deseeded, finely chopped
Red cabbage
3 cup(s), (255g), shredded
Green cabbage
3 cup(s), (255g), shredded
Celery
4 stick(s), thinly sliced
Fresh mint
1 cup(s)
Fresh coriander
1 cup(s), leaves
Multigrain bread roll
840 g, (Buy 24 x 35g rolls)
Oil spray
2 x 3 second spray(s)
Instructions

Finely grate 2 red onions. Combine grated onion, pork mince, garlic, lemongrass, lime rind, chopped coriander and 3 teaspoons of the fish sauce in a large bowl. Season. Shape mixture into 48 patties.

Preheat a large frying pan or barbecue flat plate on medium-high. Lightly spray patties with oil. Cook for 5 minutes each side or until browned and cooked through.

Whisk lime juice, caster sugar, chilli and remaining fish sauce in a large bowl until combined. Thinly slice remaining onion. Add red and green cabbage, celery, mint, sliced onion and coriander leaves. Gently toss to combine.

Warm the rolls in the oven or microwave. Divide the patties and slaw among the rolls to serve.
