Cheesy egg-in-a-hole tray bake

Bright, comforting, and ready in 20 minutes! We make cheese toasts with the bread cutouts—the perfect vessel for dunking into a runny egg yolk.

Ingredients

Wholemeal bread

4 slice(s), (4 x 35g slices)

Egg(s)

4 medium

Red leicester cheese

½ cup(s), grated, grated, (60g)

Rocket

1 cup(s), baby leaves, (30g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Place a shallow-sided baking tray in the oven. Preheat oven to 220°C (leave tray in oven as it heats).
  2. Cut a hole in the centre of each bread slice with a 5cm round biscuit cutter. Carefully remove the hot tray from oven and lightly spray with oil.
  3. Arrange bread slices and bread cut-outs on the hot tray. Crack 1 egg into each hole and sprinkle with salt. Sprinkle cheese evenly over the bread cut-outs and the edges of the bread slices. Bake for 7-10 minutes, until the egg whites are set and yolks are cooked to your liking.
  4. Remove tray from oven. Season eggs with black pepper. Scatter rocket over toasts to serve.

Notes

INGREDIENT TIP: Red Leicester cheese is a hard English cheese, similar to cheddar but more crumbly in texture. If you can’t find it, replace with cheddar or light tasty cheese.
