tomato-based salsa

canned corn kernels in brine, rinsed, drained

Notes

Cut tortillas into 8 wedges each and arrange on an oven tray, lined with baking paper. Spray lightly with oil and bake for 8-10 minutes, turning once, until golden and crisp. Meanwhile, in a small saucepan, cook beans with salsa for 3 minutes or until heated through. Arrange tortilla chips in a small ovenproof dish, top with bean mixture and sprinkle with cheese. Grill on high until cheese is melted and golden. Top with corn kernels, tomato, shallots, sour cream and fresh coriander leaves.
