1. In a medium bowl, sift flour, sugar, baking powder, and salt. In a separate bowl, whisk egg, milk, and oil. Add wet ingredients to dry ingredients; gently stir to combine.
2. Lightly coat preheated mini waffle maker with cooking spray. Spoon a scant 1/3 cup batter onto waffle iron; cover maker and cook until browned and cooked through, about 2-3 minutes. Set waffle aside, keep warm, and repeat with remaining ingredients.
