Roasted radishes achieve a delicious crispy finish with a juicy mellow bite. We top them here with lemon, dill and garlic to pair with just about any main dish. Thirty minutes from start to finish and you can introduce new flavors to your table. These savory roasted radishes make a wonderful warm starter, before the salad, at a dinner party. Any leftovers are delicious sliced on a deli-meat sandwich or sprinkled over a green salad for a herbaceous kick. Serve with some flaky white fish like cod or grouper and simple roasted green beans for a fun and vibrant side dish.

Ingredients

Radishes

2 pound(s), trimmed, halved vertically

Olive oil

2 tsp, extra virgin

Kosher salt

¾ tsp, or to taste

Black pepper

tsp, or to taste

Dill

1 tsp, fresh, minced

Lemon zest

½ tsp

Fresh lemon juice

½ tsp

Jarred minced garlic

½ tsp

Instructions

  1. Preheat oven to 450°F. Line two baking sheets with parchment paper; set aside
  2. In a medium bowl, toss together radishes, oil, salt and pepper. Spread radishes on prepared baking sheets in a single layer, cut-sides down (it will be crowded); roast 10 minutes, stirring once and switching pan positions in oven after 5 minutes.
  3. Spoon radishes into a serving bowl and toss with dill, lemon zest, lemon juice and garlic; serve immediately.
