Frozen watermelon virgin mojitos

These frozen cocktails are a great way to use up leftover watermelon. They are picture perfect in the glass and the bright, tasty frozen fruit cubes are such fun, the whole family will love them as a warm weather treat! Puree and freeze the melon in ice cube trays for a refreshing treat any time, really. You could use them with any refrigerated fruit juice, or even in a glass of sparkling water. You'll need about a 7 1/2 pound watermelon for this recipe. The mint is what makes this watermelon elixir a mojito. And the bright, punchy herb also adds to the drink's cooling effect. Cheers!

Lemon lime soda
16 fl oz, divided
Fresh lime juice

3 Tbsp, fresh, minced, divided
- In a blender, puree watermelon (you will end up with about 6 cups of puree).
- Pour 2 cups of puree into each of 2 standard-size ice cube trays (16 cubes each); freeze until solid (several hours or overnight). Reserve remaining 2 cups watermelon puree in refrigerator.
- When ready to make mojitos, place one tray of watermelon puree cubes, 1 cup refrigerated watermelon puree, 1 cup soda, 6 tbsp lime juice, and 1 tbsp ruma extract in blender; blend until smooth. Stir in 1 1/2 tbsp fresh mint and pour into 4 glasses; garnish with additional fresh mint, if desired. Repeat with remaining ingredients to make 4 more mojitos.
