These spicy fritters are full of fresh flavours so you can enjoy a taste of sunshine whatever the weather


Ingredients
New potatoes, raw
500 g
Courgette
3 medium
Egg, whole, raw
1 medium, raw
Mint, Fresh
10 sprig(s)
Coriander, fresh
10 sprig(s)
Plain White Flour
40 g
Lemon
½ zest(s) of 1
Lemon Juice, Fresh
1 tablespoon(s)
Chilli flakes
¼ teaspoon(s), level
Cumin seeds
½ teaspoon(s), level
Light feta cheese
50 g
Olive Oil
½ tablespoon(s)
Cherry Tomatoes
200 g
Salad leaves
200 g
Spring Onions

Bring a pan of water to the boil, add the potatoes and simmer for 10–15 minutes until just tender. Drain and leave to cool.

Meanwhile, coarsely grate the courgettes. Put in a large, clean tea towel and squeeze out most of the water. Set aside. Place the egg in a large bowl, add the courgette, mint, coriander, flour, lemon zest, chilli flakes and the cumin. Season and stir well.

Crumble in the feta and fold through. Heat the oil in a large frying pan over a medium heat. Fry heaped tablespoons of the mixture for a few minutes each side until golden. Combine the potatoes with the tomatoes, leaves and spring onions and squeeze over the lemon juice. Serve alongside the fritters.
