New potatoes, raw

500 g, roughly chopped if large


3 medium

Egg, whole, raw

1 medium, raw, beaten

Mint, Fresh

10 sprig(s), roughly chopped

Coriander, fresh

10 sprig(s), roughly chopped

Plain White Flour

Lemon Juice, Fresh

Chilli flakes

¼ teaspoon(s), level

Light feta cheese

Olive Oil

Cherry Tomatoes

200 g, halved

Salad leaves

200 g, mixed leaves

Spring Onions

4 medium, sliced


  1. Bring a pan of water to the boil, add the potatoes and simmer for 10–15 minutes until just tender. Drain and leave to cool.
  2. Meanwhile, coarsely grate the courgettes. Put in a large, clean tea towel and squeeze out most of the water. Set aside. Place the egg in a large bowl, add the courgette, mint, coriander, flour, lemon zest, chilli flakes and the cumin. Season and stir well.
  3. Crumble in the feta and fold through. Heat the oil in a large frying pan over a medium heat. Fry heaped tablespoons of the mixture for a few minutes each side until golden. Combine the potatoes with the tomatoes, leaves and spring onions and squeeze over the lemon juice. Serve alongside the fritters.
