Rice wine vinegar
50 g, cut into thin matchsticks
¼ small, thinly sliced
Wholemeal bread roll
140 g, (buy 2 x 70g) sesame seeds variety
Light whole egg mayonnaise
Mixed salad leaves
½ cup(s), (15g)
Skinless turkey breast, baked or roasted
- Combine vinegar and sugar in a small bowl and stir to dissolve the sugar. Add carrot and onion, toss to combine and set aside for 30 minutes, stirring occasionally.
- Split the bread rolls down the top centre. Open rolls out and spread with mayonnaise. Fill with salad leaves, turkey and pickled vegetables. Season with salt and pepper. Top with coriander to serve.
