Ingredients

Olive oil

1 tsp

Garlic

2 clove(s), crushed

Baby spinach

150 g

Dried chilli flakes

½ tsp

Pizza base, thin

1 medium, (1 x 250g pizza base)

Reduced-fat ricotta cheese

cup(s), (160g)

Light mozzarella cheese

½ cup(s), grated, (60g)

Grated parmesan cheese

2 tbs

Pepperoni salami

60 g, thinly sliced, halved

Instructions

  1. Preheat oven to 180°C. Line a large baking tray with a WW pan liner or baking paper.
  2. Heat oil in a large non-stick frying pan over medium heat. Add garlic and cook, stirring for 1 minute. Add spinach a few handfuls at a time, stirring constantly and adding more as spinach wilts. Continue cooking until all spinach is wilted. Stir in chilli flakes and season with salt.
  3. Place pizza base on baking tray. Spread ricotta evenly over base. Top with spinach. Sprinkle with mozzarella and parmesan and top evenly with pepperoni. Bake for 8 minutes or until cheeses are melted and just begin to brown in places. Cut into 6 slices.

Notes

TIP: A white pizza (without tomato) lends itself to other topping such as cooked leeks or caramelized onion or you can even crack an egg on top.
