Slow-cooker chicken tikka masala
Canned diced tomatoes
2 400g can, (2 x 400g cans)
1 medium, chopped
2 clove(s), crushed
1 tbs, finely grated
Chicken thigh, skinless, raw
810 g, fillets, fat trimmed (buy 900g)
99% fat-free, plain or natural yoghurt, unsweetened
1 cup(s), (240g)
- Combine all ingredients, except yoghurt and coriander, in a 5.5L (22-cup capacity) slow cooker. Cover with lid. Cook on low for 7 hours (or high for 4 hours), or until chicken is very tender.
- Turn slow cooker off and stir through yoghurt. Divide among 8 plates and sprinkle with fresh coriander.
