Give tacos a healthy modern twist with these spice coated prawns. Perfect for a quick summer dinner that all the amigos will love.


Coleslaw mix, without dressing

225 g

Oil spray

1 x 3 second spray(s)

Raw peeled prawns

600 g, peeled, deveined

Reduced-salt taco seasoning mix

30 g

Extra light sour cream

¼ cup(s)

Flour tortilla(s)

  1. Lightly spray a non-stick frying pan with oil and heat over high heat. Combine prawns and spice mix in a bowl and toss to coat. Cook prawns turning, in batches, for 2-3 minutes or until just cooked through.
  2. Meanwhile, combine sour cream and 1Tbs hot water in a large bowl. Season with salt and pepper. Add coleslaw mix and toss gently to combine.
  3. Heat tortillas in microwave following packet instructions. Top half of each tortilla with coleslaw mixture and prawns. Serve.


SERVING SUGGESTION: Lime wedges, plus a salsa of diced avocado, Lebanese cucumber, tomato and fresh coriander.
