Pork, broccolini and plum stir-fry

This healthy stir-fry has plenty of texture with juicy pork, tender crisp greens and crunchy bamboo shoots


Ingredients
Pork medallion or loin steak, raw
80 g, lean, thinly sliced (Buy 100g)
Red onion
½ small, cut into thin wedges
Canned bamboo shoots, rinsed and drained
45 g, (½x225g can)
Broccolini
1 bunch(es), trimmed, chopped
Snow peas
50 g, trimmed, halved
Plum sauce
2 tbs
Bean sprouts
40 g, trimmed (2tbs)
Fresh coriander
1 tbs, sprigs
Oil spray
1 x 3 second spray(s)

Lightly spray a wok with oil and heat over high heat. Stir-fry the pork for 2 minutes or until browned. Transfer to a plate. Stir-fry the onion, bamboo shoots and broccolini for 5 minutes or until the broccolini is tender crisp.

Return the pork to the pan with the snow peas, plum sauce and 1 tablespoon water and stir-fry for 2–3 minutes or until heated through. Serve topped with bean sprouts and coriander.
