Pork, broccolini and plum stir-fry

This healthy stir-fry has plenty of texture with juicy pork, tender crisp greens and crunchy bamboo shoots


Pork medallion or loin steak

80 g, lean, thinly sliced (Buy 100g)

Red onion

½ small, cut into thin wedges

Canned bamboo shoots, rinsed, drained

45 g, (½x225g can)


1 bunch(es), trimmed, chopped

Snow peas

50 g, trimmed, halved

Plum sauce

2 tbs

Bean sprouts

40 g, trimmed (2tbs)

Fresh coriander

1 tbs, sprigs

Oil spray

1 x 3 second spray(s)


  1. Lightly spray a wok with oil and heat over high heat. Stir-fry the pork for 2 minutes or until browned. Transfer to a plate. Stir-fry the onion, bamboo shoots and broccolini for 5 minutes or until the broccolini is tender crisp.
  2. Return the pork to the pan with the snow peas, plum sauce and 1 tablespoon water and stir-fry for 2–3 minutes or until heated through. Serve topped with bean sprouts and coriander.


To serve 4: Use 400g pork loin steaks, 1 medium red onion, 2 bunches broccolini, 2 x 225g cans bamboo shoots, 200g snow peas, ⅔ cup (160ml) plum sauce, ⅓ cup (80ml) water, ⅔ cup (50g) bean sprouts and ⅓ cup fresh coriander sprigs.
