Pork and apple rissoles with carrot salad
1 cup(s), shredded, cut into wedges
Lean pork mince
Green apple, unpeeled
2 large, coarsely grated
1 slice(s), (35g) breadcrumbs, stale
½ tsp, mixed
2 medium, coarsely grated
Light whole egg mayonnaise
99% fat-free, plain Greek yoghurt, unsweetened
2 tbs, chopped
- Combine pork, apple, breadcrumbs, onion flakes and mixed herbs in a bowl. Season and mix until well combined. Shape mixture into 8 rissoles. Heat oil in a non-stick frying pan over medium heat. Cook rissoles for 4-5 minutes each side or until cooked through.
- Meanwhile, coarsely grate carrot and apple. Combine in a large bowl with mayonnaise and yoghurt. Season.
- Serve rissoles with carrot salad, lettuce wedges and sprinkle with walnuts.
