Chicken, olive and potato tray bake
450 g, (500g), cut into wedges
8 individual, (buy 1kg, skinless), fat trimmed
2 medium, cut into wedges
green olives, drained
¼ cup(s), (60g)
350 g, trimmed
fresh flat-leaf parsley
- Preheat oven to 200°C or 180°C fan-forced. Place potatoes in a large baking dish. Drizzle with half the oil and season with salt and freshly ground black pepper. Bake for 20 minutes. Add chicken and lemon to dish with potatoes and drizzle with remaining oil. Bake for 15 minutes. Add olives and bake for 10–15 minutes or until chicken is cooked through.
- Meanwhile, boil, steam or microwave broccolini and green beans until tender. Drain.
- Sprinkle chicken, potato, lemon and green olives with parsley and drizzle with pan juices. Serve with broccolini and green beans.
