The traditional, rustic flavours of this dish will transport you to Spain where paella originates. Ready in only 20 minutes you can enjoy it any day of the week.

Ingredients

Chorizo sausage

100 g, cut into 1cm pieces

Skinless chicken breast

1 medium, cut into 2cm pieces

Smoked paprika

2 tsp

Green shallot(s)

4 individual, thinly sliced

Red capsicum

1 medium, cut into 1cm pieces

Raw peeled prawns

250 g, peeled and deveined

Frozen green peas

1 cup(s), (120g)

Cooked jasmine rice

2 cup(s)

Chicken stock

½ cup(s), (125ml) hot

Lime(s)

1 medium, cut into wedges, to serve

Instructions

  1. Heat a non-stick frying pan over medium-high heat. Cook chorizo sausage and chicken, tossing, for 3-4 minutes until golden. Add smoked paprika, shallots and red capsicum and cook, stirring, for 1 minute until fragrant.
  2. Add prawns, peas and rice and stir well. Add hot chicken stock. Bring to the boil. Reduce heat, simmer, covered, for 5 minutes. Uncover and stir to separate the grains. Serve with shallots and lime wedges.

Notes

SERVING SUGGESTION: Baby spinach leaves, tomato and cucumber salad.
