Tuna and white bean salad
canned cannellini beans, rinsed, drained
1 400g can
tuna, canned in springwater, drained
fresh flat-leaf parsley
¼ tbs, (English)
high-fibre wholegrain bread
Combine baby rocket, halved cherry tomatoes, sliced red onion, canned cannellini beans, canned tuna, fresh parsley and dill. Whisk a little olive oil, English mustard and lemon juice. Drizzle over salad. Serve with high-fibre wholegrain bread. Follow with a piece of fresh fruit.
