Notes

Heat a non-stick frying pan over medium-high heat. Spray with oil. Add onions and cook for 5 minute. Add eggplant and paprika and season with salt and pepper. Cook until golden and soft. Add basil and tomatoes and cook for 5 minutes. Spoon over toast and crumble with ricotta.
