Steak Diane with creamy mash

light sour cream

lean beef fillet

100 g, (Buy 125g steak), fat trimmed

olive oil

½ clove(s), crushed

no added salt tomato paste

Worcestershire sauce

1 tsp

salt-reduced liquid beef stock

2 tbs

light cooking cream

2 tsp

fresh chives

½ tsp, chopped


Mash potatoes with sour cream and skim milk. Season well and set aside. Heat a frying pan. Brush beef steak with ½ tsp olive oil and cook to your liking. Set aside. Heat ½ tsp olive oil in same pan. Cook garlic until fragrant. Add tomato paste, brandy and Worcestershire sauce and stock and bring to the boil. Add cooking cream and stir until thickened. Top steak with sauce and sprinkle with chives. Serve steak with mashed potato.
