Pancakes with walnut & honey yoghurt

white self-raising flour
80 ml, (1/3 cup)
vanilla bean extract
Apricot, canned in natural juice, drained
Nestle Soleil Yoghurt, Vanilla
Combine 40g self-raising flour (sifted) and 1 tsp caster sugar. Whisk 1/2 egg, 1/3 cup skim milk and ½ tsp vanilla extract. Add egg mixture to flour mixture and whisk batter until combined. Heat a frying pan lightly sprayed with oil. Pour in batter to make 2 pancakes. Cook until golden. Top pancakes with 3 canned apricot halves in natural juice (drained, chopped), 2tbs Nestle Soleil Vanilla yoghurt and 2 walnuts (chopped). Serve drizzled with 1 tsp honey.
