Notes

Spray a frying pan with olive oil. Cook mushrooms and thyme over high heat until golden and soft. Season with salt and pepper. Combine ricotta, chives, salt and pepper in a bowl and mix. Spread ricotta mixture over toast and top with mushrooms. Enjoy the pear as a pre-breakfast snack.
