Orange sweet potato (kumara)

canned chickpeas, rinsed and drained

Zucchini

1 small, ,ends trimmed, thinly chopped

MasterFoods Seasoning Mix, Moroccan

Maggi Stock Cubes, Chicken

½ individual, ,(dissolved in 1/4 cup hot water)

Lemon juice

fresh coriander

2 tbs, , finely chopped

Nestle Soleil Yoghurt, Peach and Mango, No Fat

Notes

Combine rice, shallots, sweet potato, chickpeas and zucchini in a bowl. Stir through seasoning, stock, lemon juice and coriander. Toss well to combine. Taste and season with salt and pepper. Finish lunch with the yoghurt.
