  • 1 tbs Weight Watchers Cottage Cheese
  • 2 tsp fresh flat-leaf parsley, finely chopped
  • 30 g 97% fat-free deli sliced ham
  • 1/2 cup(s) rocket leaves
  • 1 slice(s) high fibre wholemeal bread, toasted
Notes
Whisk 2 eggs, 1 tbs Weight Watchers Cottage Cheese and 2 tsp finely chopped fresh flat-leaf parsley in a bowl. Season with salt and pepper. Pour into a pan lightly sprayed with oil and cook until base of omelette has set. Sprinkle half the omelette with 30g 97% fat-free deli-sliced ham (coarsely chopped) and ½ cup rocket leaves. Fold to enclose filling. Serve with 1 x 35g slice high-fibre wholemeal bread (toasted).
