Lamb, frenched cutlet or rack, cooked without added fat

Combine 100g shredded red cabbage, 1 thinly sliced apple, 1 finely chopped green shallot, 1 tbs finely chopped fresh flat-leaf parsley, 1 tbs Greek-style no-fat yoghurt and 2 tsp Dijon mustard in a bowl. Serve with 3 grilled lamb cutlets trimmed of fat along with 1 rye crispbread.
