Eggplant rolls with tomato salsa
low-fat ricotta cheese
high fibre white bread
Nestle Soleil Yoghurt, Vanilla
Chargrill sliced eggplant with a little olive oil. Roll around a mixture of low-fat ricotta cheese, green shallots and fresh basil. Bake. Top with chopped tomatoes mixed with lemon juice and a little olive oil. Serve with high-fibre bread and salad leaves. Follow with Ski Soleil Yoghurt.
