Ingredients

Reduced calorie mayonnaise

1½ tbsp(s)

Prepared wasabi paste

1 tsp(s)

Mixed grain bread

4 slice(s)

Fresh baby spinach

½ cup(s), loosely packed

Plum tomato(es)

1 medium, sliced

Avocado

½ medium, ripe, thinly sliced

Cooking spray

1 spray(s)

Deli style low sodium turkey breast

6 oz, sliced

Low-fat Swiss cheese

2 oz, sliced

Instructions

  1. In a cup, stir together the mayonnaise and wasabi paste. Spread one side of each slice of bread with wasabi sauce. Layer 2 slices of bread evenly with spinach, tomato, avocado, turkey, and Swiss cheese. Top with the remaining slices of bread.
  2. Spray a ridged grill pan with cooking spray and set it over medium-high heat. Place sandwiches in the pan and top with another heavy skillet to weight them. Cook until the cheese is melted and the bread is golden brown and crispy, about 2 minutes on each side (or grill sandwiches in panini press.)
  3. Per serving: 1 sandwich

Notes

You can also use 1 1/2 tablespoons wasabi sauce instead of mixing together the wasabi paste and mayonnaise.
