Turkey smash burgers

When burger patties are flattened or smashed into a scorching hot cooking surface like a skillet or griddle, it creates a delicious crispy crust on the outside which we melt some ooey gooey Cheddar onto for the ultimate fast food fakeout. Use regular ground turkey--not ground turkey breast in these burgers. You need that little bit of fat to help develop that great crust on the patty.


Ingredients
Cooking spray

Red onion
4 slice(s), thick, sliced thin
Uncooked 93% lean ground turkey
1 pound(s)
Kosher salt
½ tsp(s), divided
Black pepper
½ tsp(s), divided
Reduced-fat cheddar cheese
2 oz, 4 slices
Mustard
4 tsp(s)
Light whole wheat hamburger buns
4 bun(s), toasted
Iceberg lettuce
4 leaf/leaves, medium
Fresh tomatoes
1 medium, cut into 8 slices
Instructions

Coat a large cast-iron skillet with cooking spray. Heat pan over medium-high heat. Add onion slices; cook until lightly charred, 2 to 3 minutes per side. Transfer onion to a plate and cover with plastic wrap.

Divide turkey into 8 equal portions, shaping each into a ball. Place 4 balls in hot skillet; using a large spatula, smash each ball into a very flat 4-in circle. Sprinkle with half of salt and pepper and cook until well browned on bottom, 2 to 3 minutes. Turn patties over, scraping with spatula to release from pan; cook until done, 2 to 3 minutes. Repeat with remaining turkey, salt, and pepper. Arrange cheese evenly over each of 4 patties; top with remaining 4 patties.

Spread mustard over buns. Layer buns with lettuce, onion, patty stacks, and tomato.
