Cremini mushrooms

½ cup(s), sliced

Fresh shiitake mushroom

½ cup(s), sliced

Firm tofu

3 oz, diced into small cubes

Fresh zucchini spirals

1 cup(s)

Table salt

tsp(s), (or more to taste)

Black pepper

tsp(s), (or more to taste)

Olive oil

1 tsp(s)

Dried rosemary

tsp(s), (or more to taste), or fresh

Dried thyme

tsp(s), (or more to taste), or fresh


  1. Heat oven to 400°F.
  2. Cut a piece of parchment paper or foil and fold in half, right down the middle. Cut into a heart shape. Place all ingredients on one side of the heart. Fold the other side of the heart over and crimp the rounded edge until it is tightly closed.
  3. Place closed packet on a rimmed baking sheet. Transfer to the oven and *bake for 20 minutes.
  4. Once baked, the package should puff up, making for a restaurant-quality serving for one! Enjoy!


Baking time may vary depending on how firm or soft you'd like the tofu to be upon serving. It's all personal preference so ensure to adjust cooking times as needed!
