This easy to assemble dish is perfect for breakfast, lunch or dinner, and it's all in one pan!
Ingredients
  • fat free salsa
    1 cup(s)
  • canned black beans
    ½ cup(s)
  • fat free vegetable broth
    ¼ cup(s)
  • hot sauce
    1 splash(es), to taste
  • frozen corn kernels
    ¼ cup(s)
  • egg(s)
    4 item(s)
  • uncooked scallion(s)
    1 medium, diced
  • shredded cheddar cheese
    ¼ cup(s)
Instructions
  1. Set a sauté pan with a tight fitting lid over medium-high heat and add the salsa, black beans, hot sauce, vegetable stock, and corn, and bring to a simmer.
  2. Once sauce starts to simmer, create four wells in the sauce and crack an egg into each well. Cook for 3 minutes. Cover for 2 more minutes until eggs are set to your liking.
  3. Add green onions and cheese and serve.
