Uncooked elbow macaroni

Low-fat milk

Low fat cream cheese

Grated Parmesan cheese

2 medium, sliced, divided

Reduced fat sharp cheddar cheese made with 2% milk

1 cup(s), shredded, divided

Baby arugula

2 cup(s)

Grape tomatoes

1 cup(s), halved

Instructions

  1. Microwave bacon according to package directions until crisp. Set aside.
  2. In a 2 litre (2 quart) glass measure or bowl, combine water and salt. Stir in macaroni and microwave on High 5 minutes; stir again. Microwave 5 minutes; stir once more. Microwave until al dente, about 4 minutes; drain in a colander. Set aside.
  3. Into the same glass measure, pour milk. Add cream cheese, Parmesan, and half of scallions; microwave on High 1 minute. Add 175 ml (3/4 cup) cheddar, whisking until melted. Stir in pasta, arugula, and tomatoes and microwave on High until arugula is wilted, 2 minutes.
  4. Into each of 4 bowls, spoon 375 ml (1 1/2 cups) mac 'n' cheese. Crumble 1 slice bacon onto each serving and sprinkle evenly with reamining 60 ml (1/4 cup) cheddar and scallions.
  5. Per serving - 375 ml (1 1/2 cups) mac 'n' cheese and 15 ml (1 Tbsp) cheddar
