Kielbasa-Bean Slow Cooker Soup

Toss the ingredients into a slow cooker in the morning, and you'll be eating this delicious, homemade soup for dinner. Leftovers make a perfect light lunch.
fat free chicken broth50 oz, four 14.5 oz cans
low-fat sausage(s)16 oz, smoked, or reduced-fat kielbasa, cut in half lengthwise and then sliced
canned black beans15 oz, rinsed and drained
canned pinto beans15 oz, rinsed and drained
uncooked carrot(s)4 medium, chopped
uncooked celery3 rib(s), medium, stalks, chopped
uncooked onion(s)1 large, chopped
dried thyme1 tsp
canned diced tomatoes14 ½ oz, undrained
- Mix all ingredients, except tomatoes, in a 5 to 6-quart slow cooker (crockpot). Cover and cook on low-heat setting at least 6 hours or until beans are tender.
- Stir in tomatoes; cover and cook on high-heat setting until heated through, about 15 minutes more. Yields about 1 heaping cup per serving.
