Kielbasa-Bean Slow Cooker Soup

Toss the ingredients into a slow cooker in the morning, and you'll be eating this delicious, homemade soup for dinner. Leftovers make a perfect light lunch.


Ingredients
Fat free chicken broth
50 oz, four 14.5 oz cans
Low-fat sausage
16 oz, smoked, or reduced-fat kielbasa, cut in half lengthwise and then sliced
Canned black beans
15 oz, rinsed and drained
Canned pinto beans
15 oz, rinsed and drained
Carrots
4 medium, chopped
Celery
3 stalk(s), medium, stalks, chopped
Onion
1 large, chopped
Dried thyme
1 tsp(s)
Canned diced tomatoes
14½ oz, undrained
Instructions

Mix all ingredients, except tomatoes, in a 5 to 6-quart slow cooker (crockpot). Cover and cook on low-heat setting at least 6 hours or until beans are tender.

Stir in tomatoes; cover and cook on high-heat setting until heated through, about 15 minutes more. Yields about 1 heaping cup per serving.
