These Italian-inspired crustless sandwiches make tuna salad look downright dainty. Chopped canned artichoke hearts impart a vegetal note to the creamy mix, while briny capers and fresh lemon zest add zip. If you happen to have hard-boiled eggs in your fridge, try layering a few slices on top of the tuna mixture before adding the top slice of bread.


Light mayonnaise

2 tsp(s), chopped

Dijon mustard

Lemon zest

½ tsp(s), finely grated

Table salt

Black pepper

Chunk light tuna in water

4 oz, drained well

Canned artichoke hearts without oil

¼ cup(s), chopped

White bread

4 slice(s), crusts removed


  1. In a medium bowl, whisk the mayonnaise, capers, mustard, lemon zest, salt, and black pepper. Stir in the tuna and artichokes.
  2. Divide the tuna salad between 2 slices of the bread. Top each sandwich with 1 slice of the remaining bread. Cut each sandwich in half on an angle.
  3. Serving size: 2 sandwich halves
