You may not have thought of grilling bok choy but you should! It brings out its natural sweetness while a tangy miso glaze provides a delicious finish to this dish.

Ingredients

Miso

¼ cup(s), white miso paste

Mirin

1½ fl oz

Dark brown sugar

2 tbsp(s)

Sesame oil

1 tsp(s)

Low sodium soy sauce

1 tsp(s)

Cooking spray

1 spray(s)

Baby bok choy

8 head(s), halved lengthwise and rinsed/dried

Instructions

  1. Whisk together miso, mirin, brown sugar, sesame oil, and soy sauce in a small bowl. Heat a large grill pan or outdoor grill on medium high and spray with cooking spray.
  2. Grill bok choy for 7-8 minutes per side, until wilted and lightly charred. Spoon glaze evenly across cut side of each piece and grill, glaze down, for 1-2 minutes or until caramelized. Serve warm or room temperature.

Notes

If you’re doing this inside be aware that the glaze may smoke a bit. Alternatively you can spoon the glaze over the grilled bok choy and pop under the broiler for a few minutes to caramelize.
