These protein-packed muffins are the perfect breakfast or snack. Nutritious and delicious, these sweet bites use protein pancake mix in place of flour.

Ingredients

High protein pancake mix

2 cup(s), preferably kodiak cakes power cakes mix (or similar)

Dark chocolate chips

3 tbsp(s), preferably Lily's dark chocolate premium baking chips

Banana(s)

2 medium

Baking soda

½ tsp(s)

Baking powder

1 tsp(s)

Ground cinnamon

2 tsp(s)

Table salt

½ tsp(s)

Egg(s)

2 large egg(s)

Unsweetened applesauce

½ cup(s)

Vanilla extract

Instructions

  1. Preheat the oven to 350°F. Line 12 muffin cups with paper liners.
  2. In a medium bowl, mash bananas and mix well with wet ingredients
  3. In a separate bowl, mix dry ingredients, combine well, and then add chocolate chips.
  4. Fill muffin cups with batter. Bake for 15 minutes or until toothpick comes out clean. Let cool and serve!
