Turn your favourite Mediterranean salad into a Greek-inspired handheld wrap perfect for a quick lunch or dinner, barbecue or picnic. You can use store-bought pita bread or even make your own!

Ingredients

Tomato

2 medium, chopped

Cucumber

1 large, chopped

Shallots

2 medium, thinly sliced

Fresh dill

1 tbsp(s), chopped

Fresh lemon juice

2 tsp(s)

Whole wheat pita

2 item(s), cut into halves

Garlic hummus

cup(s), or any flavour

Mixed greens

2 cup(s)

Reduced-fat feta cheese

4 oz, crumbled

Instructions

  1. Combine tomatoes, cucumber, shallots, dill and lemon juice in a large bowl. Set aside.
  2. Cut pita in half to form 4 pockets. Spread 1 tablespoon hummus inside each pocket.
  3. Gently stir salad leaves and feta through tomato mixture. Divide salad evenly among pita pockets.
  4. Serving size: 1/2 filled pita

Notes

To avoid soggy-bread syndrome, complete step 1 the night before and fill the pita pockets in the morning. Make this recipe your own by using any flavour of hummus you prefer!
