Easy Bloody Caesar Soup

This refreshing chilled soup brings out all the flavours of Canada’s favourite drink. It’s wonderful for a light lunch and pretty enough for a dinner.


Ingredients
Salted butter
1 tbsp(s)
Onion
1 cup(s), diced small
Celery
½ cup(s), thinly sliced
Minced garlic
1 tsp(s), minced
Worcestershire sauce
2 tsp(s)
Canned diced tomatoes
26 oz, in juice (such as Pomi)
Horseradish
1 tsp(s)
Table salt
½ tsp(s), use celery salt
Hot sauce
⅛ tbsp(s), (1/2 tsp.)
Black pepper
¼ pinch(es)
Canned clams
18 oz, chopped
Fresh lime juice
½ tsp(s)
Light sour cream
¼ cup(s)
Clam-tomato juice

Instructions

Melt butter over medium heat in a large saucepan. Add onion and celery and cook, stirring often, until very soft (~10 minutes). Add garlic and Worcestershire –cook for 1 minute, add tomatoes, Clamato juice, horseradish, celery salt, tobacco, and pepper. Bring to a boil and simmer for 5 minutes. Puree using an immersion blender or blender. Add 2 full cans of clams (including juices) and 1 drained can of clams. Chill soup thoroughly before serving. Whisk together lime juice and sour cream. Garnish each bowl of soup with 2 tsp lime sour cream and a sprinkle of celery salt.
