A great make-ahead dish, jambalaya is perfect for feeding a crowd, particularly on a cold winter day.


Uncooked turkey sausage(s)

2½ oz, chopped

Uncooked onion(s)

1 large, chopped

Green pepper(s)

1 small, chopped

Dried thyme

½ tsp(s)

Table salt

1 tsp(s)

Black pepper

½ pinch, ground

Garlic clove(s)

2 clove(s), large, minced

Roasted skinless boneless chicken breast

2 gm, cubed, about 2 cups

Fat free chicken broth

2 cup(s)

Uncooked celery

1 stalk(s), medium, stalk, chopped

Cayenne pepper

¼ tsp(s)

Canned tomatoes

28 oz, whole, plum, peeled with juice

Uncooked white rice

  1. Coat a large, nonstick saucepan with cooking spray. Over high heat, sauté the turkey sausage until crispy on edges. Add onion, celery and green pepper and sauté until tender.
  2. Reduce heat and stir in cayenne, thyme, salt, pepper and garlic. Sauté until garlic is fragrant.
  3. Stir in chicken, tomatoes, broth and rice. Bring to a simmer, cover and let cook until rice is tender, 20 minutes.
  4. Yields about 1 1/4 cups per serving.
