Make a batch of the sausage patties over the weekend and hard boil some eggs for no-cook breakfasts all week long. We paired these with scrambled eggs but you can serve them with fried eggs, omelets, or a frittata, if you prefer.

Ingredients

Cooking spray

Uncooked 93% lean ground turkey

½ pound(s)

Fresh sage

2 tsp(s), finely chopped

Fresh thyme

1 tsp(s), finely chopped

Table salt

½ tsp(s)

Black pepper

¼ tsp(s)

Instructions

  1. In a large bowl, combine the turkey, sage, thyme, salt, and pepper. Using a fork, gently mix until seasonings are evenly incorporated but not over mixed.
  2. Place a sheet of parchment paper or nonstick foil on a work surface. Divide the turkey mixture into 8 equal portions and place on parchment using about 2 tablespoons of mixture for each. With damp hands, shape into 2 1/2-inch patties (don't worry if edges crack).
  3. Generously spray a large nonstick skillet with cooking spray and set over medium heat. Place the patties in the skillet and cook until the sausages are lightly browned and just cooked through, about 2 minutes per side. Meanwhile, scramble eggs to your liking with cooking spray, salt, and pepper.
  4. Serving size: 2 sausage patties and 1 egg
