Ingredients

Yellow bell pepper

2 medium

Cream cheese

4 tbsp(s)

Everything bagel seasoning blend

2 tsp(s)

Deli sliced turkey breast

6 oz

Baby spinach

½ cup(s)

Hamburger pickle chips

½ cup(s)

Red onion

¼ cup(s), sliced

Table salt

2 pinch(es)

Black pepper

2 pinch(es)

Instructions

  1. Wash and dry the peppers. Slice off the top and bottom of each pepper, remove the seeds and membrane from the inside, and cut the peppers in half lengthwise to create two halves from each pepper. Spread 1 tablespoon of cream cheese on the inside of each bell pepper half. Sprinkle everything bagel seasoning over the cream cheese, distributing it evenly among the pepper halves.
  2. To assemble each sandwich, layer half the turkey on each of 2 pepper halves, cream cheese side up, folding each slice of turkey in half if needed to fit inside the peppers. Top each with half the spinach, pickles, and onions. Season with salt and pepper to taste. Close each sandwich by placing another bell pepper half on top, with the cream cheese side facing down.
  3. Serving size: 1 sandwich

Notes

You can eat the sandwich as is or secure it with a toothpick or wrap it in plastic wrap for a portable meal.
