Vic's 5 minute chocolate puddings

4 individual, ( 4 x 15g biscuits), crushed
2 tbs, granulated, (heaped tablespoons)
Sugar-free maple flavoured syrup
- Combine wheat biscuits, sweetener and 3 teaspoons cocoa in a medium bowl. Pour over 1 cup (250ml) warm water and let soak for 2 minutes. Mix in vanilla and egg until well combined and batter forms.
- Spoon mixture into 6 holes of a ⅓ cup (80ml) capacity silicone muffin tray or individual moulds. Microwave on high (100%) for 5 minutes, or until a skewer inserted into the centre comes out clean. Set aside in tray for a few minutes to cool slightly before turning out onto a wire rack.
- Meanwhile, to make the chocolate sauce, mix 1 tablespoon cocoa with syrup in a small bowl until well combined. Add ½ teaspoon water at a time until you get the desired consistency of chocolate sauce. Divide puddings among 6 plates. Lightly dust with remaining 1 teaspoon cocoa and drizzle over chocolate sauce and serve.
TIP: If you prefer a muffin texture, you can bake in the oven at 180°C for 20-25 minutes.
