Turkey patties with cauliflower and carrot salad

Want a quick and easy midweek meal that’s something different that the kids will love? Then give these patties a try. They also work well on burgers and in wraps, and are freezer friendly


Ingredients
Turkey breast mince
500 g
Onion
1 medium, finely chopped
Moroccan seasoning
2 tsp
Fresh flat-leaf parsley
¼ cup(s), chopped
Canned diced tomatoes
1 400g can, (1 x 400g can)
Harissa paste
2 tsp, (optional)
Cauliflower
400 g, coarsely grated
Carrot(s)
1 medium, coarsely grated
Ground cumin
1 tsp
Lemon(s)
1 medium, to serve
Oil spray
1 x 3 second spray(s)

Place turkey, onion, Moroccan seasoning and 2 tablespoons parsley in a large bowl. Season with salt and pepper, and mix until well combined. Shape into 12 even-sized balls then flatten slightly.

Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook patties for 4-5 minutes on each side or until browned. Stir tomatoes and harissa paste into pan and bring to a simmer. Cover and simmer for 10 minutes.

Meanwhile, toss cauliflower, carrot, cumin and remaining parsley in a large bowl to combine.

Divide cauliflower and carrot salad between serving plates and top with patties. Serve with lemon wedges.
