Chilli con carne is always a fab go-to dish. Our tasty version is filled with spices, kidney beans and fresh tomatoes.

Ingredients

brown onion

1 medium, finely chopped

green capsicum

1 medium, finely chopped

celery

1 individual, stick, finely chopped

extra lean beef mince

400 g

smoked paprika

1 tbs

ground cumin

2 tsp

dried oregano

1 tsp

tomato paste

1 tbs

tomato(es)

2 large, ripe, finely chopped

Canned red kidney beans, rinsed, drained

400 g, (1 x 400g can)

oil spray

1 x 3 second spray(s)

Instructions

  1. Heat a large non-stick frying pan over medium-high heat. Lightly spray with oil. Cook onion, capsicum and celery, stirring occasionally, for 5 minutes or until softened. Add mince and cook, stirring to break up lumps, for 5-7 minutes or until browned.
  2. Add paprika, cumin and oregano and stir for 1 minute or until fragrant. Add tomato paste, tomato, beans and ½ cup (125ml) water. Reduce heat and simmer for 5 minutes or until thickened.

Notes

SERVING SUGGESTION: Sliced fresh jalapenos, lime wedges and fresh coriander sprigs. Guacamole, made with 1 large mashed avocado, 1 tbs lime juice, 1 finely chopped tomato and 2 finely chopped green shallots, mixed together in a medium bowl. Toasted flour tortilla.
