Ingredients

Instant coffee

1 tbs, granules

Reduced-fat ricotta cheese

360 g, fresh

Granulated stevia sweetener

¼ cup(s), (55g)

Custard, low-fat

250 g

Sponge finger biscuits

165 g, (see tip)

Cocoa powder

1 tbs

Instructions

  1. Dissolve coffee in 1 ¼ cups (310ml) boiling water in a jug. Set aside to cool.
  2. Meanwhile, whisk ricotta, sweetener and custard in a large bowl until combined.
  3. Spread one-third of the ricotta mixture over base of 1.25 litre (5-cup) capacity dish (about 16cm x 26cm). Dip biscuits, 1 at a time, in coffee and place side-by-side in dish. Cover with remaining ricotta mixture and sprinkle with cocoa. Cover and place in fridge for 4 hours for flavours to develop. Serve.

Notes

We used 8 large sponge finger (savioardi) biscuits for this recipe. If unavailable, use 175g regular sponge finger biscuits. Add it: 2 tbs marsala in Step 1. Swap it: ½ cup (125ml) custard for ¼ cup chocolate hazelnut spread.
