Strawberry french toast sandwich

Pan-fry the bread until golden, then scatter fresh strawberries over the top - what a perfect way to start the day.


Ingredients
High fibre white bread
2 slice(s), (70g) crusts removed
Berry jam
3 tsp, (we used strawberry)
Egg(s)
1 medium
Skim milk
2 tbs
Caster sugar
1 tsp
Vanilla bean extract
¼ tsp
Fresh strawberries
5 individual, hulled, quartered
Icing sugar
1 tsp
Oil spray
1 x 3 second spray(s)
Instructions

Lightly spray a small non-stick frying pan with oil and heat over medium heat.

Spread one slice of the bread with jam. Sandwich with remaining slice of bread. Whisk the egg, milk, sugar and vanilla in a small bowl until combined. Dip each side of the sandwich in the egg mixture until it soaks in.

Cook sandwich in preheated pan for 2–3 minutes each side or until golden. Top with strawberries and serve lightly dusted with icing sugar.
