Steak and white bean mash with mushroom sauce

Succulent sirloin steaks served with a creamy bean mash, mushroom sauce and steamed green beans – ideal for when you’re looking for something speedy but special.


Ingredients
Beef sirloin steak, raw
810 g, (buy 4 x 225g steaks), fat trimmed
Swiss brown mushrooms
200 g, sliced
Garlic
1 clove(s), crushed
Chicken stock
150 ml
Light sour cream
100 ml
Whole grain mustard
1 tbs
Lemon juice
1 tbs
Green string beans
200 g, trimmed
Garlic

Canned cannellini beans, rinsed, drained
3 400g can
Chicken stock
100 ml
Whole grain mustard
2 tsp
Fresh flat-leaf parsley
2 tbs, coarsely chopped
Fresh lemon rind
1 tsp, finely grated
Oil spray
2 x 3 second spray(s)
Instructions

Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook steaks for about 3 minutes on each side or until cooked to your liking. Transfer to a plate, cover loosely with foil and set aside to rest.

Add mushrooms to same pan and cook over medium heat, stirring occasionally, for about 5 minutes or until light golden. Add garlic and cook, stirring, for a further 1 minute. Stir in stock, sour cream and mustard until combined, then stir in lemon juice. Season with salt and pepper. Keep warm over a low heat.

Meanwhile, to make white bean mash, lightly spray a large nonstick saucepan with oil and heat over medium heat. Cook garlic, stirring, for 1 minute. Add cannellini beans and stock and cook, stirring, for 2-3 minutes, until heated through. Stir in mustard, parsley and lemon rind. Season with salt and pepper. Roughly mash with a potato masher.

Steam or microwave green beans until tender, then drain.

To serve, divide the mash, steaks and mushroom sauce among 4 plates. Serve with green beans on the side.
